Australia’s Hottest Wedding Cake Designers Prepare to Show Off in Brisbane!


As the world enters Royal Wedding Frenzy mode, Australia’s leading wedding cake designers are readying to face-off on the same weekend as Harry and Meghan tie the royal knot, in Brisbane at the International Cake Show Australia!!

In what may be the perfect icing storm - the International Cake Show Australia will take place in Brisbane over May 18 to 20 and will showcase some of the most breathtaking, innovative and classic wedding cake designs from all over the world.

It has been revealed pastry chef and Californian native Claire Ptak of East London’s Violet Cakes will create the royal wedding cake, which will be a break away from the traditional English fruitcake and royal icing fondant, and instead, she will bake an organic lemon and elderflower sponge cake for the royal couple using seasonal ingredients, buttercream and fresh flowers.

The International Cake Show Australia will showcase a range of wedding cake designs and designers (as well as cake artistry of all shapes and sizes) including the work of Australia’s top nine Haute Couture Cake Designers, covering traditional through to modern and architecturally challenging creations!

A program of more than 54 free demonstrations, ranging from wedding cake techniques, to how to create amazing sugar-modelled animals will be held over the three days. Two of the installation highlights include a Giant Wedding Cake that has been created by nine cake artists and led by internationally acclaimed cake designer Faye Cahill from Sydney, as well as a gravity defying Alice in Wonderland cake created by a team of five.

The nine finalists competing for the Australian Haute Couture Wedding Cake Designer of the Year Award in the fitting theme of ‘Rich, Royal & Regal’ are Sarah Jane Wicks from Brisbane, Caitlin Mitchell from Brisbane, Monica Cavallaro from Sydney, Faye Cahill from Sydney, Louisa Massignani from the Gold Coast, Zoe Clark from the Sunshine Coast, Maria Shaw from Melbourne, Greg Cleary from Brisbane, and Shayne Greenman from Mt Tamborine.

The winning haute couture cake designer (voted by members of the public attending the International Cake Show on Friday 18th and Saturday 19th May) will make history before a mass of cake devotees and a live-streamed entwining of HRH Prince Harry and Meghan Markle. Each finalist will display their finished masterpiece in the Haute Couture Wedding Cake Designer’s Marquee at the International Cake Show Australia at Brisbane Showgrounds for the public to view.

The winner will be announced at ACADA’s (the Australian Cake Artists & Decorators’ Association) Australian Cake Oscars on the evening of Saturday 19th May, presented by international cake heroes Paul Bradford and Karen Portaleo. The ACADA Australian Cake Oscar Awards are the most prestigious awards within the Australian Cake Decorating Industry.
